Nutrifos® 088 Sodium Tripolyphosphate Anhydrous (STPP) FG is a granular ingredient that dissolves easily and is suitable for ovo-lacto vegetarians. It inhibits rancidity, stabilizes proteins, and retains moisture in food products. Functioning as a sequestrant and emulsifier, it is also used as a boiler water additive.

  • Generally Recognized As Safe (GRAS) as a multiple purpose food ingredient under regulation 21 CFR 182.1810, and as a sequestrant under regulation 21 CFR 182.6810, when used in accordance with Good Manufacturing Practice.
  • Provides sequestration of multivalent metals ions for inhibition of oxidative rancidity in meat and poultry applications.
  • Provides emulsification for reduction of moisture loss during thawing and cooking of meats and poultry.
Usage Information
  • Allowed in certain meat and poultry applications with specified maximum use levels, according to the Federal Meat Inspection Act and the Poultry Products Inspection Act (9 CFR 424.21), including the following applications:
  • As an agent to help protect flavors, at levels not to exceed 0.5% in the finished product;
  • As a hog scald agent to remove hair from hog carcasses, at levels sufficient for purpose, including removal by subsequent cleaning operations in the process;
  • As a poultry scald agent to remove feathers from poultry carcasses, at levels sufficient for purpose, including removal by subsequent cleaning operations in the process;
  • To decrease the amount of cooked out juices in meat and poultry products, at levels not to exceed 0.5% of the total product.
